Vegan Fried Eggplant Medallions

Vegan Fried Eggplant Medallions are crunchy from outside and soft from inside and is a friendly recipe for vegetarians and vegans. It is very easy and simple recipe with only few ingredients and gives you a delicious taste.

Ingredients:

Eggplant (peeled and sliced) 1 large

All-purpose flour 1 cup

Onion powder 1tsp.

Smoked paprika 1/2 tsp.

Salt and pepper

Garlic powder 1 tsp.

Oil

Breadcrumbs 1 cup

sugarless almond milk 1 cup

Instructions:

Peel of the outer layer of the eggplant and cut it into slices.

Take separate bowls, put flour in the 1st bowl, almond milk in the 2nd bowl and then combine breadcrumbs, onion and garlic powder, smoked paprika, salt and pepper in the third bowl.

Now coat each of the eggplant slice into the flour, when it is coated well then dip it into the almond milk and then into the breadcrumb mixture.

Take a large pan, add cooking oil and heat on medium flame.

Now add eggplant slices into the oil and fry for 2-3 minute each side until it gives you a light golden brown color.

Now place the fried slices on the towel to remove extra oil.

It can be consumed with any dip sauce.
